A few months ago, my friend, Morgan, shared this delicious Apple Cinnamon Bread with me, and even though I am typically not a fan of cooked fruit, I love this bread and will make it again!
Apple Cinnamon Bread is a great gift for a new neighbor, a new mom, or perfect to freeze ahead for weekend mornings! One recipe is enough for one large loaf pan or three mini loaf pans, which are the perfect size for a “happie” to give away.
Apple Cinnamon Bread
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
1/2 t. cinnamon
1 stick salted butter, softened
2 eggs
1 cup refined sugar
1/2 t. vanilla extract
1/2 t. vanilla extract
3 peeled, chopped Granny Smith apples (very small pieces)
1/2 cup chopped pecans (optional)
Baker’s Joy cooking spray
Mix first six ingredients together in a small bowl and set aside.
In a mixer, blend together butter, eggs, sugar, and vanilla. Gradually add flour mixture and mix until blended thoroughly.
Add chopped apples and pecans (if desired). Mix well.
Spray the inside of a 9×5 loaf pan or three mini loaf pans with Baker’s Joy. Pour batter into pan(s). After batter is in the pan(s), sprinkle sugar and cinnamon on top of batter. (No measuring here, just sprinkle enough for a little extra taste).
For 9×5 loaf pan, bake at 350 degrees for 1 hour or until toothpick comes out clean.
For three mini loaf pans, bake at 350 degrees for about 45 minutes or until toothpick comes out clean.
**Oven cooking times vary, so be sure to test your bread before the timer rings. You may need more or less baking time.
Remove bread from oven and turn out loaves onto a cooling rack. Slice to serve!
