If you live in the Jackson, Mississippi area or have spent any significant time there, you have probably dined at The Beagle Bagel Cafe and eaten their “famous” chicken salad. If you have not, trust me, it is divine!
A few months ago, I saw a Facebook post asking for chicken salad recipes, and one of the posted replies included Beagle Bagel’s chicken salad! I immediately scratched the ingredients onto a piece of paper to make later. Let’s just say I’ve prepared this recipe three times, we loved it so much!
I did change most of the measurements initially listed on the Facebook post, so below is the final “recipe” I came up with. Please know this is not Beagle Bagel’s official chicken salad recipe, but this version comes pretty close!
The addition of thyme really sets this chicken salad apart from the traditional versions. And while sun-dried tomato bagels may be challenging to locate, they are commonly paired with this chicken salad at the restaurant. It is a delicious combination!
Beagle Bagel Chicken Salad
5-6 chicken breasts, *cooked and shredded (plus onion and celery for flavor while boiling)
5 rounded T. sour cream
6 rounded T. mayo
1/2 t. thyme
1 1/4 t. salt
1 t. pepper
1/2 t. garlic powder
3 oz. sliced almonds, **toasted
3 oz. red grapes, halved
Mix all together and refrigerate several hours or overnight. Adjust thyme and other seasonings to taste.
*For tender cooked chicken…Bring a large pot of water to a boil. Add one cut up onion and one stalk of celery to water. Add chicken and return to a boil. Boil uncovered for 12 minutes. Turn stove off, cover pot, and allow chicken to sit one hour. Tender chicken every time!
**To toast almonds, heat a small skillet to medium heat. Add almonds and toss just until they begin to brown slightly. Transfer to a plate to cool.
