With school and activities in full-swing here, easy dinners are a necessity many nights. The sandwich above was an “accidental dinner success.”
One of my favorite ways to prepare pork tenderloin is using this Honey Teriyaki Pork Tenderloin recipe. Last week, mid-dinner prep, I discovered we were out of the Honey Teriyaki Marinade, so I opted for BBQ sauce. We’ll have this again and again!
Easy BBQ Pork Sandwiches
1 package pork tenderloins
1/2 cup BBQ sauce
Slaw (optional)
Buns
Preheat oven to 225 degrees.
Separate pork tenderloins (they come 2 to a pack) and freeze one for later if not using. If you are cooking both tenderloins, I suggest baking them separately.
In a 9×13 glass baking dish, lay out a piece of foil that extends over both ends of dish. Place tenderloin in the middle of the foil and pour 1/2 cup BBQ sauce over the meat. Use a spoon to coat entire surface of tenderloin.
Wrap the foil around the pork tenderloin, creating a “packet,” with no openings. Keep the tenderloin in the baking dish. Place in oven and bake 4-5 hours at 225 degrees. (You can bake for less time at a higher temp. The lower temp ensures the tender, shreddable meat, though!)
Remove from oven, open packet, and shred the pork tenderloin with a fork. The meat will soak up some of the juice. Serve immediately or transfer shredded meat and juice to a small glass dish, cover, and return to oven at the lowest setting until ready to serve.
Serve on buns with extra BBQ sauce at the table and coleslaw, if desired.
