No Bake Peanut Butter Special K Treats

PntButtrSpecialKMainWhen my neighbor, Courtney, shows up at my door with Peanut Butter Special K Treats a few times a year, my heart leaps.   I seriously love these things.  Although they aren’t the prettiest things in the world, they make up for it in deliciousness.  And addictiveness.  And calories.  Make them soon;)

Not to mention these are perfect for your Superbowl party coming up!  With just a few ingredients and little time, you can have homemade treats for any gathering!

 No Bake Peanut Butter Special K Treats

1 cup sugar

1/2 cup brown sugar

1/4 t. salt

1 t. vanilla

1 cup Karo syrup (light)

2 cups creamy peanut butter

5 cups Special K cereal

In a saucepan, whisk together sugar, brown sugar, salt, vanilla, and Karo syrup, and bring to a boil.  Remove from heat.

In a separate, large bowl, add peanut butter and cereal, then add the hot sugar mixture.   Mix all together gently until cereal is completely coated.

Drop by spoonfuls onto easy-release foil or wax paper sprayed with Pam.  Allow to cool completely before storing in an airtight container.

Makes about 4 dozen, depending on size of treats.

  1. I love these cookies! I make some similar, only I use regular corn flakes. The lady who shared this recipe with me called them “Iggy’s”, but I’m not sure why. :)
