After the Falcons’ win yesterday, somebody I know is gearing up for the Superbowl! David has been an Atlanta Falcons fan his entire life, and during the game, he started planning the menu for the big day;). I am calling this “Superbowl Chili” simply because it’s perfect for a Superbowl party and also to differentiate it from this crowd-pleasing chili recipe…but of course a bowl of this chili would be delicious any time during the Fall or Winter months!
The original recipe was shared with me by my sister’s friend, Nicki. Thanks, Nicki, we are still enjoying this years later!
“Superbowl Chili”
2 lbs ground chuck or sirloin
1 can kidney beans (optional)
1 green pepper, chopped fine
1 onion, chopped fine
1 can Rotel tomatoes
1 can or bottle of beer
46-oz tomato juice
3 T. chili powder
Optional toppings: Sour cream, shredded cheddar, green onions
Fritos Scoops or Saltines
Dump all ingredients into a crock pot or large stock pot. In crock pot, cook on Low for 6 hours or on High for 4 hours. In a stock pot over the stove, cook on low-medium heat for 2-3 hours. Chili will be very watery at first, but it will cook down and thicken.
Serve with toppings of your choice and crackers or Fritos. Enjoy!

I made this for the Superbowl, tweaked it a bit by omitting the beer (I’m g-free) I added a little extra water to compensate and it still was awesome. Definitely a make again. Every one loved it! Thank you for sharing this super easy super delish recipe!
