Turkey Pinwheels
Ingredients
- 4 10-inch Garden Spinach tortillas (green in color)
- 30 fresh spinach leaves (washed, stems removed)
- 10 1 oz smoked deli turkey slices (#2 on the deli slice chart)
- 8 oz shredded or crumbled Velveeta cheese (pre-packaged)
Cream Cheese Spread
- 8 slices bacon, cooked and crumbled, Reserve two crumbled slices for garnish
- 1/4 cup green onion, chopped fine
- 8 oz package cream cheese, softened
- 2 Tbsp mayonnaise
- 1/2 tsp garlic salt

- Ranch dressing, our favorite is Hidden Valley homemade from packet

Cook bacon in microwave until crisp. Crumble very small.

In mixer or by hand, mix cream cheese, mayonnaise and garlic salt together. Add crumbled bacon and chopped green onion. Combine well. If needed, add a teaspoon or so of milk to make it easily spreadable.

To begin assembling the pinwheels, use a flat spatula to spread 4 Tbsp of the cream cheese mixture evenly over the entire surface of each tortilla.

Sprinkle 1/3 cup of the Velveeta cheese onto the cream cheese mixture. Then arrange 7-8 spinach leaves over the cheese, keeping spinach about 1/2 away from the side and bottom edges and 2 inches from the top of the tortilla.

Layer 2 turkey slices over the spinach, also keeping the turkey 1/2 inch away from the side and bottom edges and 2 inches from the top of the tortilla.

Roll the tortilla up tightly from the bottom toward the top. The filling may move up as you roll the tortilla, but the extra 2 inches should allow for it.

Fold the open ends down and secure each rolled tortilla tightly in plastic wrap.

Repeat with remaining tortillas. Refrigerate about 4 hours or overnight.

When ready to serve, unwrap tortilla rolls and slice with a very sharp knife into 1-inch slices. Arrange pinwheels on a platter and garnish with remaining crumbled bacon. Serve with salsa and ranch dressing!
